COCA-COLA BBQ CHICKEN

1 chicken, cut up

1 1/2 lg. onions, sliced

10 to 12 oz. Coca Cola

10 to 12 oz. catsup


Lay chicken in baking dish. Mix Coca Cola and catsup. Pour over chicken. 
Bake at 350 degrees for 1 to 1 1/2 hours. 
(Do not use Diet Cola as it will not work well.)

Feed Family of 6 a 3 course meal for $9.60 TOTAL ($1.60/person!)!

This coming week at Meijer (starting 2/27) they are having some great deals and I have come up with a 3 course (if you count salad and dessert courses :)) for a family of 6 for just $9.60 TOTAL.   The nice thing about this is that there are almost always leftovers from this dinner and they are yummy!

Salad:
1 pkg Fresh Spinach-Flat Baby Leaf Spinach- 10/$10 ($1)
1 pkg Tomatoes- 12 oz pkg 10/$10 ($1)
4 oz Cheese Shredded- Meijer Chuck Cheese- 3/$5 ($.83)


Pasta A La Andrea
1 box pasta-Mueller’s Pasta- 10/$10 ($1)
1 jar/can pasta sauce-Hunt’s Spaghetti Sauce- 10/$10 ($.10 with doubled $.45 coupon)
1 container Cottage Cheese-Meijer Cottage Cheese (24 oz container)- 2/$4 ($2)
8 oz Mozzarella Cheese (shredded by you)-Meijer chunk Cheese- 3/$5 ($1.67)
½ lb in Boneless Skinless Chicken Breasts (already cooked (fried, oven baked or whatever way you prefer)-$1.99/lb ($1)


Garlic Bread-Meijer Mini Garlic Loaf- 10/$10 ($1)


Brownies-Duncan Hines Family Brownie Mix- 10/$10 (FREE with doubled $.50 coupon)


Total Out of Pocket for Meal: $9.60
If feeding a family of 6= $1.60/person

Chocolate Covered Strawberries

1 cup (6 oz.) semi-sweet chocolate chips

1 to 2 tsp. shortening

1 pint fresh strawberries, with green tops left on


Wash strawberries and drain on paper towels. It's important that the strawberries be completely dry when dipping in chocolate.
In a saucepan over low heat or in a double boiler, melt chocolate chips and shortening, stir constantly until smooth.
Use toothpicks or a bamboo skewer into the fruit and dip into the melted chocolate.
Place on waxed paper to harden.
Refrigerate for up to 24 hours before serving.
 
For best results, use tempered chocolate or Baker's Dipping Chocolate.

Super Easy Lemon Pepper Chicken

Chicken breasts

Lemon pepper seasoning

Garlic salt


Arrange chicken breasts in baking dish. Sprinkle generously with lemon pepper seasoning and small amount of garlic. Bake at 350 degrees for 45 minutes to 1 hour.

Bruschetta





This is ready in about 10 minutes!


1 can (14.5 oz) diced tomatoes or fire roasted diced tomatoes, drained

2 tablespoons chopped fresh basil leaves

1 tablespoon extra virgin olive oil

1 clove garlic, finely chopped

16 (1/2-inch-thick) slices baguette, toasted (about 6 oz)


Stir together tomatoes, basil, olive oil and garlic.  Spoon mixture onto toasted bread slices. Serve immediately.  Makes about 16 appetizers.

CHERRY or LEMON ANGEL FOOD DESSERT

1 angel food cake

1 can cherry pie filling

1 c. sour cream

1 1/2 c. milk

1 sm pkg instant vanilla pudding


Break 1/2 cake into 9 x 13 inch pan. Spread 1/2 cherry filling over cake. Repeat with remaining cake and cherries. Beat remaining ingredients together and pour over cake. Chill overnight. Serve with topping of Cool Whip or whipped cream. Serves 12.


LEMON DESSERT:
Mix together:
Juice of 4 lemons

Grated rind of 2 lemons

1/2 c. sugar


Add 1 can condensed milk and mix 4 minutes at med speed. Whip 1 pint cream and fold into lemon mixture. Break 1/2 angel food cake in to 9 x 13 inch pan. Pour half cream mixture over cake. Repeat. Pat down gently. Cover with coconut (optional). Refrigerate overnight.

Applesauce Oatmeal Muffins

1 c. old fashioned oatmeal

1 c. applesauce

1 lg. egg, beaten

1 tsp. vanilla

4 tbsp. vegetable oil or melted butter

1 tsp. double acting baking powder

1/2 tsp. baking soda

1 tsp. cinnamon

1/2 c. milk, orange or apple juice (or frozen concentrate)

3/4 c. whole wheat flour

1/3 sugar (optional)

1/2 c. cranberries, dried cranberries or raisins (optional)

Cheese Ball



1 (8oz) Cream Cheese
1 pkg Chipped Beef (cut up)
1 pkg (8oz) Shredded Cheddar Cheese
1 Tbsp Worcestershire Sauce
Chopped Onion (opt)


Mix all ingredients together and place in a bowl.  Chill until ready to use.
 
 

Goulash



1 lb Ground Beef (or chicken or turkey)
1 Can Stewed Tomatoes
1 box Macaroni Noodles
1 Can Tomato Paste


Brown ground meat
Cook Macaroni Noodles
Combine in large pan and add tomatoes and tomato paste cook together approx 10 minutes and then serve.




Chicken and Cheese



3 to 4 Boneless Skinless Chicken Breasts
1(8oz) bag of Mozzarella Cheese (shredded)
 1 Italian Dressing Mix Packet (dry ingredients for salad dressing)


Pre-heat oven to 450°.  Mix Cheese and Dressing Packet in bowl. Place Chicken in oven safe dish and cover completely with cheese mix.  Bake for 25 to 30 minutes (when chicken is completely cooked and cheese is brown and crispy it is done.)
  
(You can adjust these servings to as many or as little as you wish.  We have this with green beans and the chicken flavored rice quite a bit.)
